          Wolf Blass Gold Label wines are grown in the region which best suits the variety: hence the Chardonnay is grown in the cool-climate Adelaide Hills region immediately to the east of the city of Adelaide at an altitude of around 350-400m above sea level. Pale to mid-straw with delicate green hues. The bouquet has stone fruits and subtle oak, with a hint of

          struck match complexity. On the palate it is full-bodied, with ripe stone fruit flavours and a grapefruit note on the finish. This helps contribute to the overall structure of the wine, which is balanced by its acid backbone. Extended time on lees during its nine months maturation in French oak barrel has provided a creamy, integrated mouthfeel that ensures the wine can be enjoyed by itself or paired with light, tasty dishes. Alc/Vol: 13%. Acidity: 6.2g/L. pH: 3.34

          De Bortoli has established itself as one of the leading wineries in the Yarra Valley and Steve Webber, the winemaker is one of the most thoughtful and innovative winemakers constantly striving to make better wines. Steve takes much of his inspiration from the classic wines of Burgundy. Fruit is selected from 4 distinct estate vineyards on the De Bortoli Dixons Creek Estate. All vineyards face east or north east and picking is based solely on flavour and balance. Grapes are hand picked, whole bunch crushed, pressed and allowed to settle overnight. The turbid juice is then racked to older French oak casks where it undergoes natural fermentation. Lees are stirred in late autumn and a little in winter and then left to rest until the finishing stages. Appearance: Light straw with a green edge. Bouquet:Flowers, hazelnut and minerals with very fine citrus aromatics.Palate: Gentle textured palate, slightly savoury, good drying phenolics, hints of nuts, nervy, good drive and length. Alc/Vol: 12.0 % pH: 3.43 TA: 6.1 g/L

          大師評(píng)論:Victoria's Yarra Valley, an hour's drive east of Melbourne is at the forefront of cool-climate viticulture in Australia. The region was first planted in 1838 and its reputation grew but in the 1920s the area fell into decline. 'Rediscovered' in the 1960s the varied topography and geology of the valley has attracted a host of winemakers. The grapes for the Lillydale Chardonnay were carefully hand-harvested in the cool of the morning and briskly transported to the winery for overnight chilling in bins. The grapes were then whole bunch pressed, with only the finest free-run juice taken, with minimal phenolic pickup and maximum flavour extraction the key to this style of Chardonnay. After a short consolidation in tank, all of the juice was then transferred to French barrels for fermentation. After a moderated temperature fermentation which lasted around 20 days using a Chardonnay specific yeast strain selected to highlight complexity and promote varietal fruit characters, the wines then began a weekly battonage (stirring) program, which was continued for approximately two months. Blending took place in April the following year, after 12 months maturation in 24 percent new French barriques and Hogsheads before being lightly fined and filtered to bottle.           大師評(píng)論:The Adelaide Hills wine region borders the city of Adelaide and is on eof Australia's most scenically beautiful wine regions. As with so many other cool-climate Australian wine regions it was planted in the 19th century but fell out of fashion as the drinkers of the time wanted full-bodied, higher alcohol wines. Australian wine legends Brian Croser and Dr Tony Jordan led the region's revival in the late 1970s and early 1980s producing Chardonnay of great distinction. Others followed and the region has expanded to be one of Australia's best sites for Sauvignon Blanc, cool-climate Shiraz, as well as Chardonnay. Site selection is key to ensure ripe grapes. Soils are mixed but principally are sandy loams. Vineyards are frequently planted on steep slopes to help air-drainage and sunlight interception.

          大師評(píng)論:Jamieson's Run Chardonnay is named after a large sheep farm or "run" owned in the 1880s by the Jamieson family. Located on what is now the Limestone Coast of South Australia; a wine region running north from Coonawarra along the coast. The bedrock in the region is limestone and this is overlain with either red sand or dark alluvial soils. The Limestone Coast has a reputation for producing elegant wines with lots of fruit intensity. The aroma is particularly floral with notes of apple blossom and white grapefruit followed by nectarine. There is a spice underlying the delicate fruit which is somewhat reminiscent of lightly roasted azelnut kernel. The palate displays all of the delicacy of a cooler season. The aromas of nectarine and hazelnut kernel carry through to the palate but with added layers of delicate white peach, orange blossom and lime rind. This wine has natural softness but is focussed and finishes crisp with lingering flavours of nectarine and peach. To help preserve the elegant fruit in this wine a portion of the wine was stored in stainless steel while a portion was matured in oak.

          大師評(píng)論:Tyrrells Vat 47 is the wine that started it all. From the Hunter Valley of New South Wales where the historic Tyrrells winery is based it is a family owned winery led by Bruce Tyrrell. Only three of Tyrrell’s own vineyards are ever used for Vat 47 - the HVD (Hunter Valley Distillery), the NVC (New Vine Cuttings) and the Short Flat vineyards. The oldest vines were planted in 1908. The vineyards are on two soils types: The Short Flat and HVD vineyards are on alluvial sandy loams and the NVC is planted on red volcanic clay. Entirely hand picked. After cold settling, the juice was partially fermented in stainless steel before being transferred into new, one and two year old French oak barriques where it was matured on yeast lees for six months prior to blending and bottling.

          大師評(píng)論:Established in 1978 by the Stonier family, but now a part of the Petaluma Group of wineries, Stonier is amongst the oldest wineries in this region. The grapes for the Stonier Pinot Noir were selected from several long term growers for Stonier, with an epicentre around Merricks, Merricks North and Balnarring. The gently de-stemmed fruit was fermented in a combination of small open fermenters and larger Potter fermenters. Approximately 3% of the blend was fermented as whole bunches. Pressed and transferred to a mix of fine grain French oak (approximately 10% new) for malo lactic fermentation, the wine was matured for 10 months prior to racking and bottling.

          大師評(píng)論:Josef Chromy Wines has a state-of-the-art winery at the base of the vineyard at Relbia, just 10 minutes South of Launceston. The vineyards are planted on black cracking clay and brown stony soils which have proved ideal for low yielding Pinot Noir. The modern and minimalist exterior provides a home for some of the best winemaking equipment available. Fruit reception begins with a vibrating hopper that gently shakes the grapes into the destemmer, which has a smooth plastic cage to prevent damage to the delicate berries. This 2010 vintage has a bright, ripe and yet lilting charm to the fruit aromas on the nose, with some ripe cherries and red fruits, a little plum too, some leafy nuances and sweet spicy oak in the mix - a complex and engaging young Pinot Noir. The palate's fine tannins stretch the entire length and breadth with both energy and verve, carrying ripe and precise red fruit flavours long and even, lifting bright and juicy through the finish. Lovely poise and balance here.

          大師評(píng)論:An elegant style of Pinot Noir from the northern section of the Adelaide Hills around Lobethal. The fruit is grown on the estate vineyards and the wine is made by renowned winemaker Justin MacNamee. It has lifted aromas of summer berries underpinned by secondary fruit characters of dark cherries. The palate is layered and complex showing goodint egration of fine, drying tannins and savoury gamey tones. Hint of cocoa and lingering acidity to finish. A true ‘burgundian’ style Pinot that has texture and body, with a balance of rich fruit and a savoury finish.

          大師評(píng)論:The Yarra Valley has a strong reputation for Pinot Noir, the cool climate with warm days and cool nights suits the variety and wineries such as Coldstream Hills, De Bortoli, Yarra Yering and Giant Steps have vintaged many outstanding Pinot Noirs. Lillydale Vineyards sources fruit from two vineyards for this wine. Select parcels of Pinot Noir were hand-harvested and delivered to the winery. The fruit was then gently destemmed into small fermentation vats for chilling. A cold soak took place prior to the beginning of fermentation to aid in the extraction of colour and flavour. Natural fermentation commenced with the must being plunged up to three times daily. A period of warm maceration on skins was also employed to increase palate richness and to further integrate and soften the tannins. The free run wine was then drained off into a balanced mix of new and seasoned French oak barriques where it remained untouched on full yeast lees until the warmth of Spring when it completed malolactic fermentation. Post blending, the wine was settled and bottled.

          大師評(píng)論:Harewood Estate, owned and operated by James Kellie, is consistently rated as one of Australia's leading wineries by Australian wine guru James Halliday. This Pinot Noir has been produced from Harewood Estate’s D-block. This block was planted in 1994 with clone 2051, also known as “Droopy” for its relatively weak cane strength (as opposed to the stronger stiffer canes of the “Upright” clone). The block has a valuable north-west aspect that captures the afternoon sun.

          The grapes produced by clone 2051 tend to have a thinner skin than the "Burgundian" clones (114, 115, 777, etc.) resulting in a “prettier”, “strawberries and cream” pinot with a lighter colour, softer tannins and more perfumed aromatics

          The wine was matured, for twelve months, in a mix of new and older French oak barriques.

          Vibrant flavours of raspberry and ripe strawberries are balanced by more complex notes of spice and truffle with a creamy mid palate. The wine finishes with hints of mocha and redcurrant acidity supported by gentle tannins and spicy French oak.

          大師評(píng)論:Wignall's is one the pioneering wineries of the Albany region of Western Australia; with a martime influences climate the winery has developed a strong reputation for Pinot Noir since the 1980s. Wignalls stunning 2010 Pinot Noir is announced by complex, intense aromatics on the nose, with fruit spectrums of Blackberries, Plums and underlying complex Spicy oak characteristics. 2010 has been described as one of the best vintages of all time in the Albany region.

          The velvety soft palate displays luscious black fruits and berries, with underlying savoury aromatics and a beautiful long, medium weight finish delivering a mount sensation.

          “Must” was cold macerated at 8 degrees for 48 hours pre fermentation, allowing the fruit to express soft tannins and strong purple colours, fermented in numerous small fermentation vessels with various yeast strains to extract as much “Terroir” from individual rows. Reasonably high temperatures were allowed (28 degrees) through the later stages of ferment, along with a limited amount of time with post ferment maceration.

          Then the wine is transferred to new and used French oak barrels for Malolactic fermentation, before being allowed to age and settle for ten months with various oaks, and on lees for complexity. Matched with Gamey and Spicy foods. Best cellared for five to eight years.
